Agave - agave cactus nectar.  This sap like liquid can be substituted for honey and is used for distilling tequila.  It's sweeter than sugar, but is a low-glycemic food. 

Can be used 1:1 for honey & Maple syrup

When baking, reduce heat of oven by 25 degrees.
