Crustless Zucchini Tomato Quiche

2 Cups chopped zucchini

1 Cup chopped tomatoes

1/2 Cup chopped onion

1/3 Cup grated Parmesan cheese

Place in greased 10 inch pie pan or cassarole dish

1 1/2 Cups milk

3/4 Cup baking mix - bisquick, krusteaz - or make your own.....see below

1/2 tsp salt

1/4 tsp pepper

3 eggs

Beat in blender until smooth. Pour over veggies. Bake in preheated oven at 400F until knif inserted in center comes out clean - about 30 min. Let stand a few minutes to cool before serving.

BAKING MIX

Use in any recipe that call for purchased baking mix

7 Cups flour

3 Cups whole wheat flour

6 TBS baking powder

1/4 C sugar

1 1/2 TBS salt

1 1/2 tsp cream of tartar

2 Cups shortening

2 Cups dry milk powder.

Combine ingredients (except Milk powder) in large bowl. Cut in shortening until mixture is the consistency of cornmeal. Gently stir in milk poweder. Store in an airtight container in a cool place.

Spinach, Caramelized Onion & Feta Quiche

This is very, very good.  I often substitue broccoli or peas for the spinach.  I also often add 1/4 or 1/2 cup of sour cream to quiches.  Really, anything dairy goes good in any quiche, if you ask me.

DO NOT, NOT CARMELIZE THE ONIONS.  CARMELIZED ONIONS ARE SOOOOO GOOD! (remember - double negative equates to a positive, right?)

2 tsp olive oil

3 cups chopped onion

1 tsp sugar

1/2 tsp salt

2 cups frozen southern-style hash browns, thawed

pie crust

1 (10 oz) package frozen chopped spinach, thawed, drained & squeezed dry

1 C milk

3 large egg whites

2 large eggs

1 1/4 C (5 oz) crumbled feta cheese

 

Preheat oven to 350.

Heat oil in non-stick skillet over medium heat.  Add onion, sugar & salt.  Cook until golden brown (20 minutes or so).  Sitr in potatoes and cook for 5 minutes or until browned.  Remove from heat.

Place pie crust in a cooking spray coated pie pan.

Spread potato mixture in bottom of crust & top with spinach.  Combine milk, egg whites, eggs and cheese.  Pour milk mixture over the spinach.  Bake at 350 for 1 hour or until set.  Shield crust with foil after about 50 minutes.

Let stand for 10 minutes before serving.

 

Another trick - if you want to - this recipe (from Cooking Light August 2000) suggests using a can of refrigerated soft breadstick dough.  You simply pull them a part and make a coil, smoosh together and then place in pie dish.  Might be fun for kids?
