Lavender Tea Cake

Except in Freya's opinion, the glaze is really optional on this.

 

1 C Sugar                                             1 tsp Baking powder

5 TBS softened butter                         ¼ tsp baking soda

½ tsp Vanilla extract                           ¼ tsp salt

1 egg                                                   1 C plain yogurt

1 egg white                                         2 TBS finely chopped lavender leaves

1 ¾ flour                                              cooking spray

 

Glaze:  1/3 C powdered sugar

            1 tsp water

            ¼ tsp vanilla

 

Oven: 350

 

Beat sugar, butter, vanilla at medium speed for about 5 minutes.

Add Egg & egg white, 1 at a time.  Beat well

Combine flour, baking powder, baking soda, & salt.  Stir well.

Add dry to moist alternating with yogurt.

Stir in lavender

Pour into 8” greased loaf pan.

Bake at 350 for 1 hour.

 

Glaze:  combine ingredients & spread over hot cake.

 

Cool in pan for 20 minutes on a wire rack.  Remove from pan.

McClain Irish Soda Bread

2 1/2 C Flour                                          1/2 C Whole Wheat Flour

1 C light brown sugar                             1 TBS baking powder

1 tsp baking soda                                   2 eggs

1/4 C butter                                           1 1/2 C buttermilk

1 C dried currants (optional)

Preheat oven to 350, grease and flour 9" spring form pan.  Place dry ingredients in large bowl.  Cut in butter.  Add eggs and buttermilk, stir to blend.  When mixture is smooth, pour into pan.  Bake for 45 minutes or until toothpick inserted in middle comes out clean.

Best served warm.

Papa Don's Whole Wheat Bread

This recipe was teased out by my father-in-law.  He use to grind his own flour and has passed on the grinder to me.  This recipe makes 4 Loaves  (8.5-in. X 4-in. x 2.5-in.  pans) and freezes well

½ Cup Hot Water

1  Tbl Sp sugar

4  Tbl Sp. Yeast

proof the yeast while remaining ingredients are prepared. (Proofing means mix water, sugar and yeast together.  Let sit until it bubbles)

6 Cups  double grnd flour

2 Cups hot water

mix at medium to slow speed until the gluten is apparent

 Add:

2/3 Cups Honey

2/3 Cups oil

2 Tbl. Sp. Salt

mix thoroughly

 add 3-4  more Cups Flour

or until the dough is thick enough to knead.

 Sprinkle all-purpose flour on cutting board.  Pour out dough and cut into 4 equal sections; one for each pan. 

 Cover with damp (soak, then wring water out) cloth (fine-tight weave, such as a flour-sack kind of dishtowel) and place somewhere that is warm (about 100ºF) for  an hour or so for the dough to rise.

 Bake at 350ºF for 30-45 min.

 Glaze crust immediately upon removal from oven with butter.

 Turn out onto cooling rack and allow the loaves to cool for a few minutes before cutting first slice (on a breadboard) with a bread knife.

Julie's Spiced Applesauce Bread

This was shared by a dear friend.  It gets rave reviews from kids to MRST Timing Crew. This moist quick bread is gragrant with apple, cinnamon, nutmeg & allspice.  Freezes well.

1 1/4 Cup applesauce

1 Cup sugar

1/2 cup vegetable oil

2 eggs

3 TBS milk

2 Cups flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp  ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp ground allspice

1/4 teasponn salt

1/2 cup nuts - optional

 

Preheat oven to 350.  Lightly grease a 9x5 loaf pan. 

In a large bowl combine applesauce, sugar, oil, eggs, & milk.  Beat well.  Sift in flour, baking soda, baking powder, cinnamon, nutmeg, allspice & salt.  Stir until smooth. 

(Fold in pecans, almonds or any other nut if you'd like - 1/2 cup)

Bake in preheated oven for 60 minutes or until a toothpick inserted into center of the loaf comes out clean.

Martinsen's Magic Mix

This waffle/pancake mix is from my father-in-law.  He got it from Betty who we think got it from her mom or grandmom.  Now, Betty's daughter is my 'dear friend' Julie whose Spiced Applesauce Bread recipe is just before this one.

6 cups( Don’s dbl-grnd) flour

¾ cup sugar

1/3 cup Baking Powder

3 Tbl. Sp. Salt

1 Cup powdered Milk

 

Mix dry ingredients thoroughly, then store in airtight container in freezer until needed.

 

To make batter:

To each cup of flour mix, add

1 egg and milk or beer (a little goes a long ways) until batter is thin enough to pour onto griddle or into waffle Iron.   For special days, add frozen huckleberries (blueberries are an acceptable substitute).

Then warm 1 Tbl Sp. Bacon grease until just liquid.  Stir into batter.  

 For waffles, spray the iron with a releasing agent or wipe on bacon fat with a basting brush.

 For pancakes, use a releasing agent of your choice.

 Cook pancakes until bubbles appear on the wet surface and the side against the iron is golden brown.  Flip pancakes only once.  Serve when second side is golden brown against the griddle.
